SPINACH STUFFED IDLI

Spinach is generally a super food with lot of nutrients. Palak is the Indian term for spinach. It is a dark leafy green vegetable and can be eaten cooked or also raw by adding the blanched spinach to the salads. It enhances the flavor and sweeter in taste when added to the salads.

            SPINACH STUFFED IDLI


INGREDIENTS

1. Idli batter - 1/2 kilo
2. Palak - 1 small bunch ( cleaned and blanched )
3. Green chilli - 2
4. Onion - 1 finely chopped 
5. Oil - 2 teaspoon 
6. Salt to taste 

METHOD

Add oil to a pan and then add the chopped onion, garlic, green chilli and saute it for 2 minutes. Then add the blanched spinach and salt to it. Boil the spinach till the water gets absorbed. Then let it cool down. Once it has cooled down grind it into a fine paste. Keep it aside in a bowl.
Now preheat the idli pot and take 1/2 ladle of idli batter and pour it in the idli plate and it forms the first layer. Then add two tablespoons of palak paste to it as a middle layer. And finally add some more idli batter on the top as the final layer. Repeat the same procedure for all the idlies. Then only we can get the stuffed spinach idli. Otherwise if we mix the palak paste with idli batter and make idli it comes out as a normal green color idli. Steam the idli for 8-10 minutes.
Serve the piping hot spinach stuffed idli with coconut and Kara chutney.
